Most "knife defense"...None of the above.<br /><br />Most "knife defense" is firmly rooted in a fantasy. Especially as taught in most martial arts schools.<br /><br />When you get into knife-centric stuff like Filipino Martial Arts, they tend to focus on what Rory called the "live blade." <br /><br />I would say that knife fighting is one instance where the adage about training for a superior opponent serves you poorly. The real "superior opponent" with a knife won't let you know he has it 'til you're bleeding. Effective training for knife defense has to take each type of encounter for what it is.
